For over 15 years, we’ve been teaching how authentic and delicious udon noodles are made in Kagawa prefecture, home of Sanuki udon, which is the most famous udon in Japan.
At this school, by teaching everything from noodle, soup, toppings, menu development, and operation/management, we’ve been helping build strong restaurants that prosper for long terms. In fact, a number of our graduates are now running famous and successful restaurants occupied the top ranking in Japan and overseas.
From January 2017, we are starting udon school in Singapore to help you become udon master and build your own successful udon business over the course of 3 intensive days. You do not need to understand Japanese. Since our class is conducted in English and Mandarin Chinese interpretation service is provided on request; you would be able to learn as much from the course as you can.
Udon noodle, especially Sanuki udon, places great importance on noodle quality.
Here, you will be presented various udon styles in regions of Japan. You will be exploring the suitable wheat for udon, the characteristic and function of each udon noodle ingredients. You will learn the science behind Yamato noodle making process in order to make delicious udon noodles. Cooking, portioning and serving different styles of udon noodle is covered. At the end, you will be able to make authentic udon noodle from scratch with your own recipe and the aid of the most-advanced machines.
Cooking dashi is essential and fundamental in Japanese cooking. It is said to be the soul of Japanese traditional cooking.
Participants will be trained to understand how to choose, store, prepare dry seafood ingredients; how to cook these ingredients to make Japanese basic broth (dashi) used specifically for udon with only natural and MSG-free ingredients. You will be exposed to variety of sauce styles in Japan and learn how to create your original soups and sauces with the basic blending method.
Tempura served in udon store is not just any common tempura.
You will learn how proper tempura batter is done, how to cut, fry different fresh ingredients to make great tempura.
The essentials in plating techniques and menu development are also covered. Here lies the clues to making your dishes appear beautiful and tempting to raise willingness-to-pay-price.
From analyzing what makes successful restaurant successful to the cause of the failed business by answering problems faced in management, the secret formula for strong noodle restaurant that succeeds through time is revealed.
How to build a restaurant, concept, financing, human resources, and other issues that noodle restaurants managers must know and consider before starting their businesses will be addressed here.
In order for each attendee to absorb, learn, and obtain as much as one can from the course, we limit the maximum number of attendees to 8 at a time. Also, 3-intensive days focus on training students to become udon masters who can build their strong business.
Our ultimate goal is to help develop successful udon restaurants. To do that, we encourage you to share your goals, passion, and information for us to better help you in this journey. We also continue to support you in many ways after graduating from the course until you build a successful business.
